Embracing dynamic cover crops and reducing tilling. VINIFICATION: Maceration takes only a few hours, vinification in two barrels AGING: Aged 30 months on the lees in barrels. Disgorged by hand, zero dosage. PRODUCTION: very limited, 669 bottles produced
