Why Sauvage? When Sophie and David Devynck and their young family arrived at the domaine in 2019 the vines were pretty much abandoned and in a wild state. The relative isolation of the Clos helps them in their struggle to farm organically, with few farmers around them to disrupt what they are trying to do with
